Procedure : Brioche Buns

To activate your dry yeast whisk ¼ cup of warm milk, dry yeast, and ½ teaspoon of sugar together. And set it aside to rest for half an hour.  In a separate bowl add 1 1/2 teaspoon of salt to your 4 cups of all-purpose flour, 5 tablespoons of sugar, 2 teaspoons of Vanilla, 4 eggs, and 2 eggs yolks roughly mix all the ingredients while adding in the activated dry yeast mixture. Mix all these ingredients while adding 4 tablespoons of butter. After adding each tablespoon of butter, give it a tough mix for about 2 minutes. Continue to knead for about 5 minutes. Your dough should be soft and sticky.  Let your dough rest, incorporate all the ingredients, and rise. You can preheat your oven and place the dough and leave it for up to 3 hours.  Take it out and place it in the fridge to chill and make it more manageable during portioning. You can leave it for up to 2 days.  To portion, cut the dough into your desired size. Carefully portion each ball while tightening and ensuring it has a smooth and taut surface.  Place each ball into a prepared baking sheet lined with parchment paperFor creativity, you can try foil paper rings and line them with butter to avoid burning and sticking to the bun. Place each bun in one ring.

To the yeast, ingredients, and flavors incorporate and rise.  To know whether your dough has risen gently press your dough if it slowly bounces back it’s good if not give it more time.  Don’t add in a lot of floors to make your dough hard. It’s supposed to be soft since it has high contents of butter.  The repeated process of putting your dough in a warm place such as an oven and later taking it out is optional. It however gives your dough enough resting time making it easy to handle and portion.  Adding salt directly to the yeast mixture will inhibit the yeast’s effectiveness. Put it in your flour mixture before adding the yeast mix.  Use warm water or milk to activate the yeast. Hot water or milk will kill all the bacteria needed.
